"You better cut the pizza into four pieces, because I'm not hungry enough to eat six" - Yogi Berra
Opened by two brothers as a food truck in 2012, 900 Degrees now has a storefront to satisfy your downtown pizza needs, including traditional pizzas, as well as cauliflower crusts for your gluten-free friends.

Starting with fresh stone-ground organic whole grain flour, Artisan Oven doesn't use preservatives or artificial additives. Now with a wood-fired pizza food truck, you can get whole pizzas or pizza-by-the-slice at the Downtown Farmer's Market on Saturdays or at their standard location downtown. If possible, get their Chipotle Chicken Khachapuri pizza featuring fajita chicken drenched in a white chipotle sauce.

Making their dough fresh every day since 1969, and using a secret recipe for their incredible pizza sauce, Poppa Rollo's is a great place to take the family for lunch or dinner. You can even get a veggie pizza on a gluten-free crust that's so good even your problematic uncle probably won't notice it's gluten-free.

By now a Baylor institution, Shorty's serves up New York-style pizza, which you can get in 14", 18", or by-the-slice. The dough is hand-tossed every day and features a family- and pet-friendly outdoor patio with full bar service. I've never had a bad pizza at Shorty's. Their wings are solid, too, but you should treat yourself to Shorty's famous Pizza Pillows: pizza dough stuffed with cheese and toppings of your choice, folded like a pillow, and baked.

One of the newest restaurants to hit the Waco area, Slow Rise features salads, wings (half-price on Mondays), meatballs, loaded fries (queso, bacon, green onions, sour cream, and optional jalapenos - which are a must, imo). However, you're here for pizza, and pizza ye shall receive. You can get whole pizzas with a gluten-free option, but it's a slice house, and they're serious about slices: Cheese, pepperoni, margherita, but the show-stealer is The Butcher: red sauce, mozzarella, pepperoni, Italian sausage, hamburger, and bacon. They'll be around a while, but you can get in on the ground floor here and say you knew them when...
