  • Over at the Magnolia Silos sits a food truck that bakes wood-fired pizzas American-style or Neapolitan-style in a brick oven. You can also get flatbreads for $7, and the pizzas start at $8. Great value for a great personal pizza.

  • This delightful food truck near Bosque and New Road serves up hot baked potatoes featuring toppings like chicken, brisket, and tuna at a reasonable price. All potatoes come with a salad, as well. There's a veggie baked potato option, as well.

Blasian Asian

  • The Yellow Noodles are out of this world, as is just about everything that the Blasian Asian offers, which includes a delightful curry, stir-fry lemongrass beef, and pad thai. It's the only place in Waco for Cambodian food, and I've yet to order an item I didn't love.

Cheddar Box

  • Specializing in grilled cheese sandwiches, Cheddar Box is the place for gourmet grilled cheese and macaroni & cheese on the go - get a combo to enjoy them both. Located at the Magnolia Silos, you won't want to miss Cheddar Box. Vegetarian-friendly, not so much for vegans and gluten-free folk.

Club Sandwich

  • Waco's own Asian fusion food truck, Club Sandwich has options for all tastes from vegetarians to those of you who bathe in gluten. Be sure to try the trashcan rice bowl, or get it on a bed of shredded cabbage and make it a salad.

Co-Town Crepes

  • Delicious sweet and savory crepes to satisfy even the pickiest of eaters. Like Bruecklyn from McKinney, who only eats chicken tenders but still only weighs a buck ten.

El Pollo Palenque

  • Did you know that there are food trucks that aren't downtown or at the Silos? Crazy, but it's true. Check Taqueria El Pollo Palenque out on La Salle - their tacos are absolutely delicious, particularly the barbacoa. Great tacos at a great price.

  • Part of the Bake-N-Load food truck complex, Falafel-N-Load specializes in Mediterranean food. The shawarma is fantastic, the falafel is perfectly done, as is the rest of their traditional Middle Eastern fare.

G&G Gary's Grill

  • Located next to Pinewood Roasters, I'm just going to go ahead and crown this place as having the best steak taco in Waco. Don't miss the huaraches, or their flavored water. A must-stop while you're here.

  • Just outside of Pinewood Public House is Helberg Barbecue - some of the best barbecue you can get in Waco.

Koko Ramen

  • Run by the former pitmaster at EastSide Tavern in Austin, Koko Ramen serves up legit noodles from a trailer behind Dancing Bear Pub, and - maybe it's college nostalgia - I absolutely love it. The pork belly is almost literally unbelievable (we're talking about a former pitmaster here, after all). They do prepare a vegan broth, so you can definitely hit up Koko if that's you're lifestyle. Something for everyone, Koko Ramen is a straight up hit.

Las Trancas Taqueria

  • I've never been by Las Trancas and seen it empty, even at 2:30am. This taco truck serves up delicious tacos, tortas, and quesadillas...even at 2:30am. It's probably *more* delicious at 2:30am.

Nightlight Donuts

  • I need all of their donuts in my belly all of the time, and I need them in there now. Nightlight is one of the newer places in Waco, and currently operates out of their food truck. Follow them on Instagram for their updated locations and hours.

Pokey O's Cookies & Ice Cream

  • Who doesn't like cookies and ice cream? Vladimir Putin, that's who (unconfirmed). Pokey O's keeps things fun by revealing on Instagram where they'll be that day, so make sure you're following, because missing out on their sweet treats is a fate worse than death.

  • While their tacos and quesadillas are legit, the breakfast burritos set Sergio's apart. They're massive, they're delicious, and they're cheap - Sergio's is everything you could want in a food truck.

  • I'm getting old. 3:30am is "too early" for me now, instead of being "too late," like it was when I was at ACU 16 years ago. I'll be honest: there are times when I've randomly woken up at 2:30am and headed to La Milpa, because they're the truth. With tasty tacos and great elotes, La Milpa has your late-night (or early-morning) dining needs.
